茶叶的种类很多,要把茶叶最好的色香味通过冲泡去发挥出来,并不容易,需要根据不同茶叶的特性,运用不同的冲泡技艺才能达到。目前流传下来的泡茶方法主要有以下五种:

一、煮茶法

1、 Tea making

在唐代以前,最普遍的饮茶方法是将茶叶直接放入锅中熟煮,陆羽在《茶经》中对煮茶法有非常详细的介绍。具体操作过程是:

(1)将茶饼碾碎待用,精选优质的水放入煮茶器中,用炭火烧开,但是不能完全烧开。

(2)此时加入碾碎的茶末,茶与水渐渐交融在一起,将水继续加热至第二次沸腾,会出现沫饽。沫是细小的茶花,饽是大的茶花,都是茶的精华。将沫饽舀出来放在茶盂之中,准备后面使用。

二、点茶法

(1)将饼茶碾碎,放在茶碗中以备使用。

(2)用炭火烧水,烧到轻微沸腾时舀去冲点碗中的茶末,使得茶与水交融为一体。

(2) Use charcoal fire to boil water. When it boils slightly, scoop out the tea powder in the bowl to make tea and water blend into one.

(3)使用一种叫做“茶筅”的工具用力搅动茶水,使得水乳交融,渐渐泛起茶花,如堆云积雪一般。因此这种工具也叫被叫做“搅茶公子”。

(4)根据茶花出现的快慢以及水纹露出的快慢来判断茶的好坏,茶花洁白,水脚露出缓慢而且不散开,表明是好茶。因为这样点出的茶汤茶乳交融,汤质浓稠,饮用时在盏中胶着不干,被形象地称为“咬盏”。

四、点花茶法

这个方法始于明代,泡茶时,将梅花、桂花或者茉莉花这类有明显芳香味的花骨朵儿摘取少数几个直接与末茶一起放入茶碗,注入热水,热茶汤会将花骨朵儿催开绽放。既能观赏花开的奇妙美景,又能闻到浓郁的花香和茶香,色香味同时享受,美不胜收。

When making tea, a small number of flower bone buds with obvious fragrance such as plum blossom, osmanthus or jasmine were picked, and a few were directly put into the tea bowl with the end tea.
